Can You Eat Cheddar Cheese With Green Spots on It?

A small green mold spot on a solid block of cheddar doesn’t always mean you must throw the whole thing away. Cut at least 1 inch (2.5 cm) around and below the mold, keeping your knife away from the affected area. Discard shredded, sliced, or soft cheese if mold appears, and throw away hard cheese with extensive mold or an unusual smell. To prevent mold, store cheddar properly in the refrigerator and wrap it in parchment or wax paper.
